  • Walnut halves, for decoration — 100 g (1 cup)

Method

  1. Preheat the oven to 175°C (350°F) and grease two cake tins.
  2. Beat the egg yolks with the sugar until pale and thick.
  3. Fold in the ground walnuts, breadcrumbs and baking powder.
  4. Whisk the egg whites to stiff peaks, then gently fold into the walnut mixture.
  5. Divide the batter between the prepared tins.
  6. Bake for 25-30 minutes until a skewer comes out clean.
  7. Cool completely, then remove from the tins.
  8. Beat the butter with the icing sugar until fluffy, then beat in the cooled melted chocolate.
  9. Spread a layer of chocolate cream between the two cake layers, then cover the top and sides.
  10. Decorate with walnut halves before serving.
