Ingredients
- Minced meat (beef or pork) — 300 g (10 oz)
- Cabbage, finely shredded — 100 g (3.5 oz)

Method
- Combine the minced meat, cabbage, carrot, spring onions, garlic, soy sauce, salt and pepper in a bowl.
- Place a spoonful of filling near one edge of each spring roll wrapper.
- Roll tightly, folding in the sides, and seal the edge with beaten egg.
- Heat oil for frying in a deep pan to 175°C (345°F).
- Fry the nems in batches for 4-5 minutes, turning occasionally, until deeply golden and crisp.
- Drain on paper towels and serve hot.
