Ingredients
- Beef or lamb, cubed — 800 g (1.75 lb)
- Smooth peanut butter — 200 g (2/3 cup)
- Onion, chopped — 1
- Garlic, minced — 3 cloves
- Tomatoes, chopped — 3
- Tomato paste — 2 tbsp
- Carrots, chopped — 2
- Sweet Potato, chopped — 1
- Scotch Bonnet pepper, whole — 1
- Water — 1 L (4 cups)
- Vegetable oil — 2 tbsp
- Salt and black pepper, — to taste
Method
- Heat oil in a large pot and brown the meat pieces; set aside.
- Sauté the onion and garlic in the same pot until softened.
- Add the tomatoes and tomato paste, cooking until it forms a thick sauce.
- Return the meat to the pot with the water and scotch bonnet.
- Simmer, covered, for 45-50 minutes until the meat is nearly tender.
- Whisk the peanut butter with a ladleful of the hot broth to loosen, then stir into the pot.
- Add the carrots and sweet potato, simmering a further 25-30 minutes until the vegetables and meat are fully tender.
- Remove the scotch bonnet, season with salt and pepper, and serve hot with rice.
