Ingredients

  • Dried chickpeas, soaked overnight (not canned) — 400 g (2 cups)
  • Onion, roughly chopped — 1
  • Garlic — 4 cloves
  • Large Bunch fresh parsley — 1
  • Large Bunch fresh cilantro — 1
  • Ground cumin — 1 tsp
  • Ground coriander — 1 tsp
  • Baking powder — 1/2 tsp
  • Salt and black pepper, — to taste
  • Oil for deep frying

Method

  1. Drain the soaked chickpeas well and pat dry.
  2. Combine the chickpeas, onion, garlic, parsley, cilantro, cumin and coriander in a food processor.
  3. Pulse until finely chopped and well combined but not pureed to a paste; the mixture should hold together when pressed.
  4. Stir in the baking powder, salt and pepper.
  5. Rest the mixture in the refrigerator for 30 minutes.
  6. Shape into small balls or patties.
  7. Heat oil to 180°C (350°F) in a deep pan.
  8. Fry the falafel in batches for 3-4 minutes until deeply golden and crisp.
  9. Drain on paper towels and serve hot.
