Ingredients

  • Small tapioca pearls — 100 g (1/2 cup)
  • Water — 750 ml (3 cups)
  • Coconut milk — 400 ml (14 oz)
  • Sugar, or to taste — 100 g (1/2 cup)
  • Vanilla extract — 1/2 tsp
  • Of salt — pinch

Method

  1. Rinse the tapioca pearls under cold water.
  2. Bring the water to a boil in a saucepan and add the tapioca pearls.
  3. Reduce heat and simmer for 15-20 minutes, stirring occasionally, until the pearls turn translucent.
  4. Stir in the coconut milk, sugar, vanilla and salt.
  5. Simmer a further 5 minutes until well combined and slightly thickened.
  6. Serve warm, or chill and serve cold.
