Ingredients

  • Very fresh firm white fish fillet, cubed — 500 g (1 lb)
  • Juice of 4 limes
  • Coconut cream — 250 ml (1 cup)
  • Small onion, finely diced — 1
  • Tomato, diced — 1
  • Cucumber, finely diced — 1
  • Spring onion, sliced — 1
  • Salt, — to taste

Method

  1. Place the cubed fish in a glass or ceramic bowl and cover with the lime juice.
  2. Refrigerate for 20-30 minutes, stirring once, until the fish turns opaque and firm.
  3. Drain off most of the lime juice, leaving a little for flavour.
  4. Fold in the coconut cream, onion, tomato, cucumber and spring onion.
  5. Season with salt to taste.
  6. Serve chilled immediately.
