Ingredients
- Small sweet melon (about 1 kg/2 lb), peeled, seeded and cubed — 1
- Dried apricots — 100 g (2/3 cup)
- Raisins — 50 g (1/3 cup)
- Water — 1 L (4 cups)
- Sugar, or to taste — 3 tbsp
- Cinnamon stick — 1
- Lemon juice — 1 tsp
Method
- Bring the water, sugar and cinnamon stick to a boil in a medium saucepan, stirring until the sugar dissolves.
- Add the dried apricots and raisins, reduce to a simmer, and cook for 10 minutes until softened.
- Add the melon cubes and lemon juice, and simmer gently for a further 5–7 minutes, until the melon is just tender but still holds its shape.
- Remove from the heat, discard the cinnamon stick, and let cool to room temperature.
- Chill in the refrigerator for at least 1 hour before serving in bowls with some of the syrup.
