Ingredients

  • Boneless lamb or chicken thigh, thinly sliced — 800 g (1 3/4 lb)
  • Olive oil — 3 tbsp (45 ml)
  • Garlic cloves, crushed — 2
  • Yogurt — 1 tbsp
  • Paprika — 1 tsp
  • Ground cumin — 1/2 tsp
  • Salt — 1 tsp
  • Black pepper — 1/2 tsp
  • Flatbread or pide, to serve — 4 pieces
  • Sliced tomato, onion and lettuce, to serve
  • Ayran or garlic yogurt sauce, to serve

Method

  1. Combine the sliced meat with the olive oil, garlic, yogurt, paprika, cumin, salt and pepper in a bowl, mixing well to coat evenly.
  2. Cover and marinate in the refrigerator for at least 4 hours, or overnight for best flavour.
  3. Stack the marinated meat slices tightly onto skewers, or arrange in a compact layered stack on a roasting tray to mimic the traditional vertical spit.
  4. Cook under a hot grill or in a 220°C (425°F) oven for 18–20 minutes, turning or rotating occasionally, until browned and cooked through.
  5. Slice the cooked meat thinly, shaving off the outer, most browned layers first, as is traditional.
  6. Serve piled into warm flatbread with sliced tomato, onion, lettuce and a garlic yogurt sauce.
