Ingredients

  • Green bell peppers — 4
  • Mild long green chillies (optional, for heat) — 2
  • Ripe tomatoes — 4
  • Garlic cloves, unpeeled — 4
  • Olive oil — 3 tbsp (45 ml)
  • Ground caraway — 1 tsp
  • Salt — 1/2 tsp
  • Canned tuna, drained (optional, to serve) — 100 g (3.5 oz)
  • Hard-boiled egg, quartered, to serve — 1
  • Capers and a few olives, to serve — 1 tbsp

Method

  1. Grill or char the peppers, chillies, tomatoes and garlic directly over a flame or under a hot grill, turning occasionally, until blackened and blistered all over, about 10–15 minutes total (garlic will need less time than the peppers).
  2. Place the charred vegetables in a covered bowl for 10 minutes to steam, then peel off the skins and remove the pepper and chilli seeds.
  3. Finely chop the peeled peppers, chillies, tomatoes and garlic together, either by hand or with a few pulses in a food processor, until well combined but still slightly textured.
  4. Stir in the olive oil, caraway and salt.
  5. Spread onto a serving plate and top with tuna, quartered hard-boiled egg, capers and olives, if using.
  6. Serve at room temperature with bread.
