Ingredients
- Green plantains, peeled and sliced — 6
- Beef or goat meat, cubed — 300 g (10.5 oz)

- Tomatoes, chopped — 2
- Garlic, minced — 2 cloves

Method
- Heat the oil in a large pot and brown the meat on all sides.
- Add the onion and garlic, and sauté until softened.
- Add the chopped tomato and cook for 5–6 minutes until it breaks down.
- Add the water or stock and bring to a simmer, then cover and cook for 30 minutes until the meat is nearly tender.
- Add the sliced plantain and continue simmering for a further 20–25 minutes until the plantain and meat are fully tender.
- Season with salt and pepper and serve hot.
