Ingredients
- Dried kidney beans, soaked overnight — 300 g (10.5 oz)
- Onion, chopped — 1
- Carrots, sliced — 2
- Tomatoes, chopped — 2
- Oil — 2 tbsp
- Water — 1.4 L (48 fl oz)
- Salt and pepper — to taste
- Chopped coriander, to garnish
Method
- Drain the soaked beans and combine with the water in a large pot.
- Bring to a boil, then reduce to a simmer and cook for 45 minutes until the beans are nearly tender.
- Heat the oil in a separate pan and sauté the onion until softened, adding the tomato and cooking for
- 5–6 minutes.
- Add the sautéed mixture and sliced carrot to the beans, and continue simmering for a further 20–25 minutes until the beans and vegetables are fully tender.
- Season with salt and pepper, and garnish with chopped coriander before serving hot.
