  • Whole white fish (about 1.2 kg / 2.6 lb), cleaned and scaled — 1
  • Onion, sliced — 1
  • Tomatoes, sliced — 2
  • Coconut cream — 300 ml (1 1/4 cups)
  • Garlic cloves, minced — 2
  • Lime, juiced — 1
  • Salt and pepper, — to taste

  5. Cover the dish with foil and bake for 30-35 minutes, until the fish is fully cooked through and flakes easily.
  6. Uncover and bake for a further 5-10 minutes to lightly brown the top, if desired.
  7. Garnish with fresh coriander and serve hot with rice or a root vegetable side.
