Method
- Place the cubed potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for 12–15 minutes until fork-tender, then drain and let cool for 10 minutes.
- In a large bowl, whisk together the mayonnaise, mustard, pickle relish, salt and pepper.
- Add the warm potatoes, chopped eggs, celery and red onion to the bowl and gently fold together until coated.
- Cover and refrigerate for at least 30 minutes to allow the flavours to meld.
- Garnish with a sprinkle of paprika before serving chilled or at cool room temperature.
