  • Medium Beetroot, boiled and diced — 2

  • Medium Carrots, boiled and diced — 2
  • Dill pickles, diced — 3
  • Sauerkraut, drained — 150 g (1 cup)
  • Small Red onion, finely diced — 1
  • Sunflower oil — 4 tbsp
  • Pickle brine or white vinegar — 1 tbsp
  • Fine salt and black pepper — to taste

  2. Cool completely, then peel and dice into small, even cubes.
  3. Combine the diced vegetables with the pickles, sauerkraut and red onion in a large bowl.
  4. Whisk the sunflower oil with the pickle brine, salt and pepper, and pour over the salad.
  5. Toss gently to coat evenly, taking care not to crush the vegetables.
  6. Chill for at least 30 minutes before serving to let the flavours combine.
