Ingredients

  • Pork loin, thinly sliced — 600 g (1.3 lb)
  • Garlic, minced — 4 cloves
  • Bay leaf — 1
  • Paprika — 1 tsp
  • White wine — 120 ml (4 fl oz)
  • Oil — 2 tbsp
  • Crusty bread rolls — 4
  • Mustard, to serve
  • Salt and pepper — to taste

Method

  1. Combine the pork slices with garlic, bay leaf, paprika, white wine, salt and pepper, and marinate for at least 2 hours, ideally overnight.
  2. Heat the oil in a large frying pan over medium-high heat.
  3. Cook the marinated pork slices, along with the marinade, for 6–8 minutes until cooked through and the liquid has reduced to a flavourful sauce.
  4. Split the bread rolls and fill generously with the pork slices, spooning over a little of the sauce.
  5. Serve with mustard on the side.

Introduction: Thin slices of marinated pork simmered and served in a crusty roll, one of Portugal's most beloved and iconic street food sandwiches.

Cultural Background: Bifana is a hugely popular Portuguese street food and café staple, sold everywhere from small kiosks to bustling city centres, its simple, satisfying combination of marinated pork and crusty bread making it a nationwide favourite.

Tips: Marinate for as long as possible, ideally overnight, for the deepest flavour. Cook the pork quickly over fairly high heat, as thin slices need only a short cooking time.

Variations: Add a few slices of pickle inside the sandwich for extra tang. Some versions include a fried egg on top for an even heartier meal.

Storage: Refrigerate cooked pork and sauce in an airtight container for up to 2 days; assemble sandwiches fresh.

Reheating: Reheat the pork gently in a pan with its sauce; assemble fresh sandwiches.
