Ingredients
- Twaróg (Polish farmer's cheese), or substitute well-drained ricotta — 1 kg (2.2 lb)
- Sugar — 200 g (7 oz)
- Eggs, separated — 4
- Butter, softened — 115 g (4 oz)
- Cornstarch or semolina — 3 tbsp
- Vanilla extract — 1 tsp
- Shortcrust pastry, for the base — 1 cup (optional)
Method
- If using a pastry base, press it into the bottom of a greased springform pan and blind bake briefly at
- 180°C (350°F) for 10 minutes; let cool.
- Preheat the oven to 160°C (325°F).
- Beat the butter and sugar until light and fluffy, then beat in the egg yolks one at a time.
- Fold in the twaróg (or ricotta), cornstarch and vanilla extract until smooth.
- In a separate bowl, whisk the egg whites to stiff peaks, then gently fold into the cheese mixture.
- Pour the batter into the prepared pan.
- Bake for 55–65 minutes until set with a slight jiggle in the centre.
- Turn off the oven and let the cheesecake cool inside with the door ajar to prevent cracking.
- Chill for at least 3 hours before serving.
