Ingredients
- Dried purple corn kernels — 150 g (5 oz)
- Water, divided — 1.9 L (64 fl oz)
- Pineapple rind and core — 1 (from 1 pineapple)
- Apple, chopped — 1
- Cinnamon stick — 1
- Cloves — 4
- Sugar, or to taste — 100 g (3.5 oz)
- Lime juice — 2 tbsp
Method
- Combine the purple corn, 6 cups of the water, pineapple rind and core, apple, cinnamon stick and cloves in a large pot.
- Bring to a boil, then reduce to a simmer and cook for 45–50 minutes until deeply coloured and fragrant.
- Strain through a fine sieve into a jug, pressing to extract as much liquid as possible; discard the solids.
- Stir in the remaining water and sugar, adjusting sweetness to taste.
- Stir in the lime juice just before serving.
- Chill well and serve over ice.
