Method
- Boil the pumpkin in the water until very tender, about 20 minutes, then mash well in the pot, retaining most of the cooking liquid.
- Stir in the cornmeal gradually, mixing to avoid lumps.
- Cook over low heat, stirring frequently, for 10–12 minutes until thickened.
- Stir in the butter, grated cheese, sugar and salt.
- Continue cooking for a further 3–5 minutes until well combined and creamy.
- Serve warm.
