- Combine the garlic, cumin, coriander, paprika, cardamom, cloves, nutmeg, vinegar, oil and salt into a thick spice paste.
- Rub the paste generously all over the meat, working it into any scored areas.

- For the traditional method, bury the wrapped meat with hot stones in an underground pit, covering completely with earth, and leave to cook for 18–24 hours.
