Introduction: Tender Norwegian meatballs served in a rich brown gravy, one of the country's most beloved and comforting everyday main dishes.
Cultural Background: Kjøttkaker are a fixture of Norwegian home cooking, larger and often more simply seasoned than Swedish meatballs, traditionally served with a rich brown gravy, boiled potatoes and lingonberry jam.
Tips: Don't overwork the meat mixture, or the meatballs can become dense rather than tender. Whisk the flour into the fat thoroughly before adding stock, to avoid lumps in the gravy.
Variations: Add a splash of soy sauce to the gravy for extra depth, a modern touch some cooks use. Serve with mashed potato instead of boiled for a heartier meal.
Storage: Refrigerate meatballs and gravy together in an airtight container for up to 3 days.
Reheating: Reheat gently on the stovetop over low heat, stirring occasionally, until hot throughout.
