Ingredients
- Dried black-eyed peas, soaked and peeled — 300 g (10.5 oz)
- Onion, chopped — 1
- Red bell pepper, chopped — 1
- Scotch bonnet pepper, chopped — 1
- Palm oil — 60 ml (2 fl oz)
- Eggs — 2
- Ground crayfish — 1 tbsp
- Salt — to taste
Method
- Blend the soaked, peeled black-eyed peas with the onion, bell pepper and scotch bonnet, adding a little water as needed, until smooth.
- Whisk in the palm oil, eggs, ground crayfish and salt until well combined.
- Pour the mixture into greased ramekins or foil parcels.
- Steam for 45–50 minutes until firm and set.
- Let cool slightly, then unmould and slice for serving.
