Introduction: Thinly sliced grilled meat coated in a spicy peanut-based suya spice blend, one of Nigeria's most iconic and beloved street starters.
Cultural Background: Suya, associated especially with the Hausa people of northern Nigeria, has spread throughout the country and beyond, its distinctive yaji spice blend of ground peanuts and chilli making it instantly recognisable and hugely popular.
Tips: Coat the meat generously with the spice mix for the authentic bold suya flavour. Slice the beef thinly for quick, even grilling.
Variations: Use chicken or ram meat in place of beef for regional variations. Adjust the cayenne quantity to taste for more or less heat.
Storage: Refrigerate cooked suya in an airtight container for up to 2 days.
Reheating: Reheat in a hot dry pan for 2–3 minutes per side, or briefly under a hot grill.
