Method

  1. Rub the cold butter into the flour until it resembles coarse crumbs, then add cold water gradually to form a firm dough; rest for 20 minutes.
  2. Preheat the oven to 180°C (350°F).
  3. Roll out the dough and line a tart dish, then blind bake for 12–15 minutes until lightly golden; let cool slightly.

  5. Whisk the eggs, sugar and cornstarch together in a bowl, then gradually whisk in the warm milk.
  6. Return the mixture to the saucepan and cook over low heat, whisking constantly, for 8–10 minutes until thickened into a smooth custard.
