Ingredients

  • Coconut milk — 2 cups (480 ml / 16 fl oz)
  • Sugar — 1/4 cup (50 g / 1.75 oz)
  • Cooked sago pearls — 1/2 cup (90 g / 3 oz)
  • Cubed agar jelly, any colour — 1/2 cup (100 g / 3.5 oz)
  • White bread, cubed and lightly toasted — 2 slices
  • Crushed ice, to serve

Method

  1. Warm the coconut milk gently with the sugar in a saucepan until the sugar dissolves; let cool, then chill.
  2. Divide the cooked sago pearls, jelly cubes and toasted bread cubes among serving bowls or glasses.
  3. Top with a generous amount of crushed ice.
  4. Pour the chilled sweetened coconut milk over the top just before serving.
