Ingredients

  • Fermented tea leaves (lahpet), drained — 1/2 cup (100 g / 3.5 oz)
  • Tomatoes, sliced — 2
  • Fried garlic — 2 tbsp
  • Fried yellow split peas — 2 tbsp
  • Roasted peanuts — 2 tbsp
  • Toasted sesame seeds — 2 tbsp
  • Green chillies, sliced — 1–2
  • Lime juice — 2 tbsp
  • Oil — 2 tbsp (ideally the oil used for frying the garlic)
  • Salt — to taste
  • Shredded cabbage, to serve

Method

  1. Combine the fermented tea leaves with the fried garlic, fried split peas, peanuts and sesame seeds in a bowl.
  2. Add the sliced chilli, lime juice, oil and salt.
  3. Toss everything together thoroughly by hand or with a spoon, mixing well.
  4. Arrange the sliced tomato and shredded cabbage on a serving plate.
  5. Mound the tea leaf mixture in the centre and serve immediately, mixing further at the table if desired.
