Ingredients
- Large ripe pineapple, peeled, cored and diced — 1
- Sugar — 1 cup (200 g / 7 oz)
- Cinnamon stick — 1

Method
- Combine the diced pineapple, sugar, cinnamon stick and water in a saucepan.
- Bring to a gentle boil, then reduce heat and simmer for 30–40 minutes, stirring occasionally, until the pineapple is soft and the syrup has thickened.
- Remove the cinnamon stick.
- Let cool slightly and serve warm or at room temperature, with whipped cream or ice cream if desired.
