Ingredients

  • Crab, cleaned and cut into pieces — 1 kg (2.2 lb)
  • Onion, chopped — 1
  • Garlic, minced — 3 cloves
  • Ginger, minced — 1 tbsp
  • Curry powder — 2 tsp
  • Turmeric — 1 tsp
  • Tomatoes, chopped — 2
  • Coconut milk — 1.5 cups (360 ml / 12 fl oz)
  • Oil — 3 tbsp
  • Chilli, chopped — 1 (optional)
  • Salt — to taste
  • Cooked rice, to serve — 2 cups

Method

  1. Heat the oil in a large pot and sauté the onion, garlic and ginger until softened.
  2. Stir in the curry powder and turmeric, cooking briefly to release the aroma.
  3. Add the chopped tomatoes and cook for 8 minutes until broken down.
  4. Add the crab pieces and chilli if using, stirring to coat in the spice mixture.
  5. Pour in the coconut milk and bring to a gentle simmer.
  6. Cover and cook for 15–20 minutes until the crab is cooked through and the sauce has thickened slightly.
  7. Season with salt and serve hot over rice.
