Ingredients
- Chinese gunpowder green tea — 2 tbsp
- Boiling water, divided — 4 cups (960 ml / 32 fl oz)
- Large bunch fresh mint — 1
- Sugar, or to taste — 4 tbsp
Method
- Place the tea leaves in the teapot and rinse briefly with a small splash of boiling water, then discard this first rinse.
- Add a cup of boiling water to the pot and let the tea steep for 2–3 minutes.
- Add the fresh mint and sugar to the pot.
- Pour in the remaining boiling water and let steep for a further 3–5 minutes.
- Pour a small glass and taste, adjusting sugar as needed, then return it to the pot.
- Pour the tea into glasses from a height to create a light foam on top, serving immediately.
