Ingredients

  • Lamb or beef, cut into small pieces — 300 g (10.5 oz)
  • Onion, chopped — 1
  • Tomatoes, chopped or grated — 2
  • Tomato paste — 2 tbsp
  • Dried lentils — 1/2 cup (100 g / 3.5 oz)
  • Chickpeas, soaked overnight — 1/2 cup (100 g / 3.5 oz)
  • Plain flour — 2 tbsp
  • Ground ginger — 1 tsp
  • Turmeric — 1 tsp
  • Cinnamon — 1/2 tsp
  • Chopped coriander and parsley — 2 tbsp
  • Oil — 3 tbsp
  • Water — 6 cups (1.4 litres / 48 fl oz)
  • Salt and pepper — to taste
  • Lemon wedges, to serve

Method

  1. Heat the oil in a large pot and brown the meat with the onion, ginger, turmeric and cinnamon.
  2. Add the tomatoes, tomato paste and water, and bring to a boil.
  3. Add the soaked chickpeas and simmer for 45 minutes.
  4. Add the lentils and continue simmering for a further 20–25 minutes until everything is tender.
  5. Whisk the flour with a little cold water to form a smooth slurry, then gradually whisk it into the soup to thicken.
  6. Simmer for a further 10 minutes, stirring occasionally.
  7. Stir in the chopped herbs and season with salt and pepper.
  8. Serve hot with lemon wedges.
