Ingredients
- Large eggplants — 2
- Tomatoes, grated or finely chopped — 4
- Garlic, minced — 3 cloves
- Ground cumin — 1 tsp
- Paprika — 1/2 tsp
- Cayenne — 1/4 tsp (optional)
- Olive oil — 1/4 cup (60 ml / 2 fl oz)
- Chopped coriander and parsley — 2 tbsp
- Salt — to taste
Method
- Roast or grill the whole eggplants until the skin is charred and the flesh is very soft, about 25–30 minutes; let cool, then peel and mash the flesh.
- Heat the olive oil in a frying pan and sauté the garlic briefly.
- Add the grated tomato, cumin, paprika and cayenne if using, and cook for 10–12 minutes until the mixture thickens.
- Stir in the mashed eggplant and cook for a further 8–10 minutes, mashing further with a fork, until the mixture is well combined and slightly jammy.
- Season with salt and stir in the chopped herbs before serving warm or at room temperature with bread.
