Ingredients

  • Millet or fine cornmeal — 1 cup (140 g / 5 oz)
  • Water, divided — 6 cups (1.4 litres / 48 fl oz)
  • Sugar — 3/4 cup (150 g / 5 oz)
  • Active dry yeast or a small amount of existing boza as a starter — 1 tbsp

Method

  1. Combine the millet or cornmeal with 2 cups of water in a saucepan and simmer for 20 minutes, stirring frequently, until thickened into a smooth porridge.
  2. Let the porridge cool to lukewarm, then stir in the remaining water and sugar.
  3. Stir in the yeast or starter culture.
  4. Cover loosely and let ferment at room temperature for 24–48 hours, stirring occasionally, until it develops a mild tang and slight effervescence.
  5. Strain through a fine sieve into a jug.
  6. Chill well before serving, dusted with a little ground cinnamon if desired.
