Method

  1. Halve the avocados, remove the pits, and scoop the flesh into a bowl.
  2. Mash the avocado with a fork to a coarse, chunky consistency — avoid making it completely smooth.
  3. Add the diced onion, chopped chile, lime juice and coriander, folding gently to combine.
  4. Fold in the diced tomato.
  5. Season with salt to taste.
  6. Serve immediately with tortilla chips.
