Ingredients

  • Corn tortillas — 4
  • Eggs — 4
  • Tomatoes, chopped — 4
  • Onion, chopped — 1
  • Garlic, minced — 2 cloves
  • Serrano chiles, chopped — 1–2
  • Oil, plus extra for frying tortillas and eggs — 2 tbsp
  • Salt — to taste

Method

  1. Heat 2 tbsp oil in a pan and sauté the onion, garlic and chile until softened.
  2. Add the chopped tomatoes and cook for 10 minutes until broken down into a thick sauce; season with salt. For a smoother sauce, blend briefly and return to the pan.
  3. In a separate pan, lightly fry the tortillas in a little oil for about 30 seconds per side, just until slightly crisp at the edges but still pliable; keep warm.
  4. In the same pan, fry the eggs to your preference.
  5. Place a tortilla on each plate, top with a fried egg, and spoon the tomato-chile sauce generously over the top.
  6. Garnish with crumbled queso fresco and chopped coriander before serving.
