- Chinese gunpowder green tea — 3 tbsp
- Water, divided — 3 cups (720 ml / 24 fl oz)

Method
- Rinse the tea leaves briefly with a small splash of hot water and discard this first rinse.
- Add 1 cup of water to the teapot with the tea leaves and bring to a boil over low heat.
- Add a portion of the sugar and mint leaves, and pour the first round into a glass from a height to create a light foam; this first round is left less sweet.
- Return the tea to the pot, add more water and sugar, and repeat the process for a second, slightly sweeter round.
- Repeat once more with the remaining water and sugar for a third, sweetest round.
- Serve each small glass promptly after pouring.
