  • Fresh gbejniet — 6 (Maltese sheep's or goat's milk cheeselets)

  • Freshly cracked black pepper
  • Dried oregano — 1 tsp
  • Crusty bread, to serve

Method

  1. Heat a grill pan or griddle over medium-high heat.
  2. Brush the gbejniet lightly with olive oil.
  3. Grill for 2–3 minutes per side until lightly charred and warmed through.
  4. Transfer to a serving plate and drizzle with more olive oil.
  5. Sprinkle with black pepper and oregano, and serve immediately with crusty bread.
