The Quirky Foodster Team

Ingredients
- All-purpose flour — 400 g (3 1/4 cups)
- Cold butter or margarine, cubed — 150 g (2/3 cup)
- Cold water — 120 ml (1/2 cup)
- Salt — 5 g (1 tsp)
- Medium Potatoes, peeled and diced small — 2
- Minced (ground) chicken — 200 g (7 oz)
- Medium Onion, finely chopped — 1
- Curry powder — 10 g (2 tsp)
- Garlic, minced — 2 cloves
- Cooking oil, plus extra for deep-frying — 30 ml (2 tbsp)
- Salt and pepper — to taste
Method
- Combine the flour and salt in a bowl, then rub in the cold butter with your fingertips until the mixture resembles coarse breadcrumbs.
- Gradually add the cold water, mixing until a firm, smooth dough forms. Wrap and rest in the refrigerator for 30 minutes.
- Meanwhile, make the filling: heat the oil in a pan and fry the onion and garlic until soft, about 4 minutes.
- Add the minced chicken and curry powder, and cook, breaking up the meat, for 5–6 minutes until browned.
- Add the diced potato and a splash of water, cover, and simmer for 10–12 minutes until the potato is tender and the mixture is thick, not wet. Season with salt and pepper, and set aside to cool completely.
- Roll out the rested dough on a floured surface to about 3 mm thickness, and cut into circles about 10 cm (4 inches) across.
- Place a spoonful of cooled filling onto one half of each circle, fold over into a half-moon shape, and pleat or crimp the edges firmly to seal.
- Heat oil for deep-frying to about 160–170°C (320–340°F), and fry the curry puffs in batches for 6–8 minutes, turning occasionally, until golden brown and crisp.
- Drain on paper towels and serve warm.
Introduction: Crisp, golden pastry parcels filled with a spiced potato and chicken curry filling — a favourite handheld snack sold at markets and roadside stalls across Malaysia.
Cultural Background: Karipap, commonly known as curry puffs, are a beloved teatime and travel snack found throughout Malaysia, with distinctive hand-pleated pastry edges that mark skilled home cooks and vendors alike. They are especially popular during festive seasons, when families often gather to make large batches together.
Tips: Keeping the butter cold and working quickly gives the pastry its characteristic flaky texture. Let the filling cool completely before assembling, or the pastry will become soft and difficult to seal. Fry at a moderate, steady temperature so the pastry cooks through without over-browning.
Variations: Add hard-boiled egg quarters or sardines to the filling for traditional regional variations. Bake at 190°C (375°F) for about 25 minutes, brushed with egg wash, for a lighter alternative to deep-frying. Make a sweet version filled with sweetened coconut or pineapple jam for a dessert-style curry puff.
Storage: Store cooled, cooked curry puffs in an airtight container in the refrigerator for up to 3 days, or freeze uncooked, assembled puffs for up to 2 months.
Reheating: Reheat in an oven at 180°C (350°F) for 8–10 minutes, or in an air fryer, to restore crispness; avoid microwaving, which softens the pastry.

FAQs:
Q: Can I make the pastry ahead of time?
A: Yes, the dough can be made and refrigerated, well wrapped, for up to 2 days, or frozen for longer storage.
Q: Why does the pastry need to stay cold?
A: Cold butter creates small pockets of fat that melt during frying, producing the characteristic flaky, crisp layers of good curry puff pastry.
Q: Is there a vegetarian filling option?
A: Yes, a filling of curried potato, carrot and peas without meat is a common and popular vegetarian variation.
