Maheu weHuchi

Ingredients
- 200 g (1 2/3 cups) maize meal
- 1.5 litres (6 cups) water, divided
- 80-100 g (1/4-1/3 cup) honey, or to taste
- 2 tbsp plain flour (optional, to help kick-start fermentation)
Method
- Mix the maize meal with 500 ml of the water to form a smooth paste.
- Bring the remaining 1 litre of water to a boil in a saucepan, then whisk in the maize paste. Cook for 5-6 minutes, stirring, until slightly thickened. Remove from heat and cool to room temperature.
- Stir in the plain flour, if using, to help encourage fermentation.
- Pour into a large glass jar or jug and cover loosely with a clean cloth to allow fermentation gases to escape.
- Leave at room temperature for 24-48 hours, tasting periodically, until pleasantly tangy.
- Strain through a fine sieve into a clean jug, stir in the honey until fully dissolved, chill well, and serve cold.
Introduction: A variation on classic mahewu, this version is sweetened with honey rather than sugar, offering a slightly more complex, floral sweetness.
Cultural Background: A variation on classic mahewu, this version is sweetened with honey rather than sugar, offering a slightly more complex, floral sweetness. It’s often prepared for special occasions or simply as a treat when honey is on hand, especially in rural beekeeping communities.
Tips: Stir the honey in only after straining, once the mixture has cooled slightly, to preserve its flavour. Taste periodically during fermentation to catch your preferred tanginess. Always use clean equipment to encourage safe fermentation.
Variations: Add a few slices of fresh ginger during fermentation for a warm, spicy note. Blend with a squeeze of lemon for a brighter finish. Serve over ice for an extra-refreshing version in hot weather. Vegetarian as written; not typically considered vegan due to the use of honey, so no forced conversion is offered.
Storage: Refrigerate in a covered jug for up to 4 days.
Reheating: Not applicable — this is a cold fermented beverage and is not reheated.
