Ingredients

  • 300 g (10 oz) fresh okra, trimmed and halved lengthways
  • 2 tomatoes, diced
  • 1 small onion, finely chopped
  • 2 tbsp vegetable oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Fresh coriander, chopped, to garnish

Method

  1. Bring a pot of salted water to a boil and blanch the okra for 2-3 minutes until just tender but still bright green. Drain and immediately rinse under cold water to stop the cooking.
  2. Pat the okra dry and place in a mixing bowl with the tomatoes and onion.
  3. In a small bowl, whisk together the oil, lemon juice, salt and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Garnish with fresh coriander and serve at room temperature or lightly chilled.

Introduction: Derere, a traditional Zimbabwean okra dish, is usually served as a soft, cooked side, but this fresh salad take offers a lighter, tangier alternative using lightly blanched okra tossed with tomato and onion — a refreshing dish popular in warmer months alongside grilled meats.

Cultural Background: Derere, a traditional Zimbabwean okra dish, is usually served as a soft, cooked side, but this fresh salad take offers a lighter, tangier alternative using lightly blanched okra tossed with tomato and onion — a refreshing dish popular in warmer months alongside grilled meats.

Tips: Blanch the okra only briefly to avoid a slimy texture — it should stay firm and bright. Rinsing in cold water immediately after blanching helps preserve its colour and crunch. Toss just before serving to keep the salad fresh and crisp.

Variations: Add a finely chopped chilli for a spicier version. Add crumbled feta for extra richness. Add sliced cucumber for extra crunch and freshness. Naturally vegan as written; no conversion needed.

Storage: Refrigerate in an airtight container for up to 2 days; best eaten fresh.

Reheating: Not applicable — this is a cold salad and is not reheated.
