Ingredients
- 240g (2 cups) Rice flour
- 240ml (1 cup) Coconut milk
- 100g (1/2 cup) Sugar
- 1 tsp Active dry yeast
- 1/4 tsp Salt
- 240ml (1 cup) Warm water
Method
- Whisk the rice flour, coconut milk, sugar, yeast, and salt together with the warm water until smooth.
- Cover and let ferment at room temperature for 1 to 2 hours until bubbly.
- Heat a small non-stick skillet over medium heat and lightly grease it.
- Pour in a small ladle of batter, swirling to coat the pan thinly.
- Cook for 2 to 3 minutes until the edges lift and the underside is golden, then flip and cook briefly on the other side.
- Repeat with the remaining batter and serve warm.
