Ingredients
- 680g (1.5 lb) Chicken pieces, bone-in
- 400ml (1 can, 14 oz) Coconut milk
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2.5cm (1-inch) piece Fresh ginger, minced
- 2 Tomatoes, chopped
- 30ml (2 tbsp) Vegetable oil
- 1 tsp Salt
- 1/2 tsp Black pepper
- 240ml (1 cup) Water
Method
- Heat the oil in a large pot and brown the chicken pieces on all sides.
- Add the onion, garlic, and ginger and cook until softened.
- Stir in the tomatoes, salt, and pepper, and cook for 3 minutes.
- Pour in the coconut milk and water, and bring to a gentle simmer.
- Cover and cook for 30 to 35 minutes, until the chicken is cooked through and the sauce has thickened slightly.
