Ingredients

  • 450g (1 lb) Shrimp, shell-on
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Tomato, chopped
  • 15ml (1 tbsp) Vegetable oil
  • 950ml (4 cups) Water or fish stock
  • 1 tsp Salt
  • 1/4 tsp Black pepper
  • 30g (2 tbsp) Chopped parsley or coriander

Method

  1. Peel the shrimp, reserving the shells.
  2. Heat the oil in a pot and sauté the shrimp shells with the onion and garlic for 5 minutes to build flavor.
  3. Add the tomato and cook for 2 more minutes.
  4. Pour in the water or stock, bring to a boil, then simmer for 15 minutes.
  5. Strain the broth to remove the shells, then return the liquid to the pot.
  6. Add the peeled shrimp, salt, and pepper, and simmer for 3 to 4 minutes until the shrimp are just cooked through.
  7. Garnish with parsley or coriander and serve hot.
