  • 300g (2 1/2 cups) Flour
  • 2 Eggs
  • 2 tbsp (25g) Sugar
  • 2 tbsp (28g) Melted butter
  • 1 tbsp (15g) Rum
  • Pinch of salt
  • Vegetable oil, for deep-frying
  • Icing sugar, for dusting

Method

  1. Combine the flour, eggs, sugar, melted butter, rum, and salt into a firm, smooth dough; knead briefly.
  2. Wrap and rest the dough for 20 minutes.
  3. Roll the dough out very thinly and cut into strips about 3cm wide and 12cm long.
  4. Cut a slit lengthwise in the centre of each strip and pull one end through the slit to form a twist.
  5. Heat oil to 175°C (345°F) and fry the twists in batches for 1-2 minutes per side until golden and crisp.
  6. Drain on paper towels, cool slightly, and dust generously with icing sugar.
