Ingredients

  • 300 g (1.5 cups) red lentils, rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1.2 L (5 cups) vegetable stock
  • 10 g (2 tsp) ground cumin
  • 30 ml (2 tbsp) olive oil
  • 30 ml (2 tbsp) lemon juice
  • 5 g (1 tsp) salt
  • 2 g (1/2 tsp) black pepper

Method

  1. Heat olive oil in a large pot and sauté onion and garlic until translucent, about 4 minutes.
  2. Add carrot and cumin, stirring for 1 minute until fragrant.
  3. Add lentils and stock, bring to a boil, then reduce heat and simmer for 25 minutes until lentils are very soft.
  4. Blend the soup until smooth using an immersion blender, or in batches in a countertop blender.
  5. Stir in lemon juice, salt and pepper, adjusting consistency with extra stock if needed.
  6. Serve hot with a lemon wedge and toasted flatbread.
