  • Pinch of saffron threads, soaked in 2 tbsp warm milk
  • 1/4 tsp salt
  • 300 ml (1 1/4 cups) warm milk
  • 1 tbsp vegetable oil, plus extra for cooking
  • Date syrup (dibis), for serving

Method

  1. Whisk together the flour, sugar, yeast, cardamom and salt in a bowl.
  2. Gradually whisk in the warm milk and saffron milk until a smooth, thick batter forms.
  3. Stir in the oil, cover, and let the batter rest in a warm place for 30 minutes until bubbly.
  4. Heat a lightly oiled non-stick pan over medium-low heat and ladle small rounds of batter into the pan.
  5. Cook for 2 minutes until bubbles form on top and the underside is golden, then flip and cook 1 more minute.
  6. Stack the warm pancakes and serve with date syrup poured over the top.
