(0)

Ingredients

  • 1.2 kg (2.6 lb) chicken pieces (thighs and drumsticks work well)
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 tbsp (10 g) grated ginger
  • 1 tsp (2 g) ground cumin
  • 1 tsp (2 g) ground coriander
  • 1/2 tsp (1 g) turmeric
  • 2 tbsp (30 ml) vegetable oil, divided
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 400 ml (1 3/4 cups) coconut milk
  • 1 green chili, sliced (optional)
  • Salt, to taste
  • Fresh coriander, to garnish

Method

  1. Marinate the chicken with lemon juice, half the garlic and ginger, cumin, coriander, turmeric and salt for at least 1 hour, or overnight in the fridge.
  2. Grill or char-grill the marinated chicken over medium-high heat until browned and mostly cooked through, about 6-8 minutes per side. Set aside.
  3. Heat the remaining oil in a large pot. Saute the onion until golden, then add the remaining garlic and ginger.
  4. Add the tomatoes and chili, cooking until softened into a sauce, about 5 minutes.
  5. Pour in the coconut milk and bring to a gentle simmer.
  6. Add the grilled chicken to the sauce and simmer for 12-15 minutes, until the chicken is fully cooked and the sauce has thickened slightly.
  7. Garnish with fresh coriander and serve hot.

Introduction: Kuku Paka is a signature dish of the Kenyan and Tanzanian coast, combining charcoal-grilled chicken with a rich, aromatic coconut and tomato sauce.

Cultural Background: Kuku Paka is a signature dish of the Kenyan and Tanzanian coast, combining charcoal-grilled chicken with a rich, aromatic coconut and tomato sauce. It showcases the deep culinary exchange between Swahili, Arab and Indian communities along the Indian Ocean trade routes, and remains a treasured dish for both everyday dinners and special family gatherings.

Tips: Grilling the chicken first before simmering adds a smoky depth characteristic of authentic Kuku Paka. Marinate for as long as possible – overnight gives the best flavour penetration. Simmer gently once the coconut milk is added to prevent it from splitting.

Variations: A grill-free version simply browns the chicken in a pan before simmering; some versions add a squeeze of lime just before serving. A vegetarian version can be made by substituting the chicken with firm tofu or a mix of chickpeas and vegetables, grilled or pan-seared before simmering in the same sauce.

Storage: Refrigerate in an airtight container for up to 3 days; freezes well for up to 2 months.

Reheating: Reheat gently in a covered pan over low heat, stirring occasionally, adding a splash of water if the sauce has thickened too much.
