Ingredients
- 50 g (1/4 cup) fine bulgur wheat, rinsed (1.75 oz)
- 3 bunches flat-leaf parsley, very finely chopped
- 1 bunch mint, finely chopped
- 3 tomatoes, finely diced
- 4 spring onions, finely sliced
- 60 ml (1/4 cup) lemon juice (2 fl oz)
- 60 ml (1/4 cup) olive oil (2 fl oz)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 small romaine lettuce, leaves separated, for serving
Method
- Soak the bulgur in cold water for 10 minutes, then drain thoroughly and squeeze out excess moisture.
- Combine the parsley, mint, tomatoes and spring onions with the bulgur in a large bowl.
- Whisk the lemon juice, olive oil, salt and pepper together and pour over the mixture.
- Toss well, tasting and adjusting lemon or salt as needed.
- Chill for 15 minutes before serving for the flavours to meld.
- Serve scooped onto romaine lettuce leaves.
