Ingredients
- 250 g (1.25 cups) red lentils, rinsed (9 oz)
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1.2 litres (5 cups) vegetable stock (40 fl oz)
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp lemon juice
- Fried bread croutons, to garnish
Method
- Saute the onion, garlic and carrot in olive oil over medium heat for 5 minutes.
- Stir in the cumin and turmeric and cook for 1 minute.
- Add the lentils and stock, bring to a boil, then reduce heat and simmer for 25 minutes until the lentils fall apart.
- Blend until smooth using an immersion blender, or in batches in a countertop blender.
- Season with salt and pepper, and thin with extra water or stock if too thick.
- Stir in the lemon juice just before serving, and top with fried bread croutons.
