  • 200 g (1 cup) short-grain rice, soaked and ground, or rice flour
  • 150 g (5 oz) ground beef
  • 1/2 tsp allspice
  • 1 onion, chopped
  • 2 tbsp tomato paste
  • 1.2 litres (5 cups) beef broth
  • 2 tbsp lemon juice
  • 2 tbsp chopped parsley

Method

  1. Combine ground rice with a little water and a pinch of salt to form a soft dough for the kubba shell.
  2. Mix ground beef with allspice and a little chopped onion to make the filling.
  3. Shape small balls of rice dough around a bit of filling, sealing well into marbles.
  4. In a pot, sauté remaining onion, then stir in tomato paste and broth; bring to a boil.
  5. Gently drop in the kubba balls and simmer for 20 minutes until cooked through.
  6. Stir in lemon juice and parsley just before serving.
