Ingredients
- 2 carrots, cut into sticks
- 1 turnip, cut into sticks
- 1 cucumber, cut into sticks
- 2 cloves garlic, sliced
- 500 ml (2 cups) white vinegar
- 250 ml (1 cup) water
- 2 tbsp salt
- 1 tsp turmeric
Method
- Pack the carrot, turnip and cucumber sticks tightly into a sterilized jar with the garlic slices.
- In a saucepan, combine vinegar, water, salt and turmeric and bring to a gentle boil.
- Pour the hot brine over the vegetables, making sure they are fully submerged.
- Seal the jar and let cool to room temperature.
- Refrigerate and allow to pickle for at least 5–7 days before eating.
