Ingredients

  • 500 g (4 cups) flour
  • 200 g (1 medium) mashed potato, cooled
  • 10 g (2 1/4 tsp) instant yeast
  • 250 ml (1 cup) warm water
  • 1 tsp salt
  • Sunflower oil, for deep frying
  • Sour cream, grated cheese and crushed garlic in oil, to top

Method

  1. Dissolve yeast in warm water; let stand 10 minutes.
  2. Combine flour, mashed potato, salt and the yeast mixture into a soft, slightly sticky dough; knead well.
  3. Cover and let rise 1 hour until doubled.
  4. Divide into portions and stretch or roll each into a flat oval, about 1 cm (1/2 in) thick.
  5. Heat oil to 180C (350F) and fry each piece 2-3 minutes per side until puffed and golden.
  6. Drain on paper towel and top immediately with garlic oil, sour cream and grated cheese while hot.
